Chicken Pot Pie


Ingredients:

Filling:

1 (10 ounce) can chicken

1 (15 ounce) can mixed vegetables

1 (11 ounce) can cream of chicken soup

1 teaspoon dried onion flakes

Salt and Pepper to taste

Mix to thin

Directions:

Mix all ingredients together in a medium bowl. Pour into a greased 8" cast iron skillet or a 8" x8" square baking dish.

Crust:

1 cup baking mix

1 stick melted butter

pinch of pepper

1/4 cup grated Parmesan cheese

1 cup buttermilk

Directions:

Mix all ingredients together. Pour over pot pie mixture and bake in a preheated 375 degree oven until golden brown and bubbly, about 40 minutes.

Note: If desired Parmesan cheese may be left out. It does not add much flavor but does add crunch to the crust. Also if desired the recipe may be doubled. Bake in a 13" x 9" pan.
