Pasta Fritta


½ pound of pasta cooked and cooled

In a bowl, combine

6 egges

3 tablespoons cream or whole milk

Salt and pepper to taste

¼ cup Parmesan cheese

½ grated cheese of your choice


Preheat oven to 375 degrees. Put oven proof skillet, (preferably cast iron), into oven to heat. Mix eggs, cream and salt and pepper. Beat well. Mix in pasta and cheeses.

Remove hot skillet from oven and coat skillet with olive oil. Pour mixture into skillet and bake in oven 15 minutes or until edges start to brown and middle is set. Cool before cutting and serving.
