1 can diced tomatoes
1 can kidney beans, (I like the ones in chili sauce)
1 can black beans
1 can pinto beans
1 can fiesta corn
1 can Rotel tomatoes
1 can chili
1 pound ground beef, chicken or turkey (optional)
1 good size chunk of Velveta cheese
Directions: Brown and drain whichever meat you like in a large pot. Add the contents of all cans, undrained. Season however you like. Bring to a boil and simmer for 15 minutes.
Add a good size chunk of Velveta cheese. Turn heat off and allow the cheese to melt. Give a stir and you are ready to serve.
