Corn Muffin Mix



2/3 cup flour

½ cup yellow corn meal or corn flour for finer texture

3 tablespoons sugar

1 tablespoon baking powder

¼ teaspoon salt

Mix all together and store in air tight container



Add one beaten egg, 1/3 cup milk and 2 tablespoons vegetable oil.  Mix until smooth and lumps are gone.

Fill 6 paper lined muffin cups and bake in a preheated 400 degree oven 15-20 minutes or until light golden brown.
