Combine oil, sugar, vanilla, eggs, salt and cinnamon in a large bowl. Add flour, milk, soda, pudding, baking powder and nuts. Mix well.
Grease two large loaf pans and pour half batter in each pan. Sprinkle top of each loaf with a mixture of
cinnamon and sugar. Bake for one hour until golden brown and toothpick inserted in the middle comes out clean. Remove from oven and cool on wire racks for 10-15 minutes and then remove from pans. Cool completely before storing.
