Mom's Coffee Can Bread

 

4 cups unsifted flour, divided 2 cups each

1 package active dry yeast

1/2 cup water

1/2 cup milk

1/2 cup butter

1/4 cup sugar

1 teaspoon salt

2 eggs, slightly beaten

1/2 cup chopped nuts

1/2 cup raisins

2 one pound tin coffee cans 

Directions:

Mix 2 cups flour with yeast in a large bowl.  In a saucepan stir water, milk, butter, sugar and salt over low heat until butter melts.  Cool for 5 minutes.  Add to flour and yeast.  Add remaining 2 cups of flour, nuts, fruit and eggs.  Dough will be stiff.  Knead on a floured board until dough is smooth. 

Coat inside of each can with oil.  Put half of the dough in each can.  cover with plastic tops.  Let rise until dough is one inch from top.  Remove lids and bake in a preheated 375 degree oven until brown on top.

Notes:  

1: I use bread flour instead of all purpose flour.  All purpose will make a heavier bread

2: I like to add 1-2 teaspoons of cinnamon in with the flour for a little extra flavor.

3: I use the dough cycle on my bread machine which mixes, kneads and raises the first time.  After the first raise     shape the dough and put it into prepared pans for second raise and baking.  I simple add all the wet                       all the wet ingredients, then the dry and add the nuts and raisins half way thru the kneading process.

4: Since you cannot find one pound metal coffee cans anymore, I use to small loaf pans.  I suppose you could 

    use one large loaf pan however I have never tried that myself.
