Roasted Potatoes


Cut potatoes in fairly large wedges or use small new potatoes and leave whole.

Mix equal parts of olive oil and balsamic vinegar in a bowl and season with salt, pepper, garlic powder and sweet paprika.  Add potatoes to mixture and toss well to coat.  Place on a greased cookie sheet and sprinkle with fresh or dried parsley.

Roast in a preheated 400 degree oven until potatoes are tender and crispy.  Remove from oven and while hot sprinkle with parmesan cheese.
