Green Pea Salad


2 cups fresh or frozen peas (thawed)

1 hard boiled egg, chopped

3 strips cooked and crumbled bacon

1/4 cup chopped red bell pepper

2 tablespoons mayonnaise

1 tablespoon chopped onion or shallot

2 teaspoons cider or wine vinegar

1/4 shredded cheddar cheese

Directions:

In a large bowl combine peas, egg, bacon, bell pepper, mayonnaise, shallot and vinegar. Toss gently to combine. Add cheese and mix in. Season with salt and pepper to taste.
