4 cups uncooked quick oats
1 cup flaked coconut
1 cup chopped nuts
1/2 cup wheat germ or ground flax seed
1/2 cup firmly packed brown sugar
1 teaspoon cinnamon
1 teaspoon salt
1/2 cup vegetable oil
1/2 cup water
1/4 cup honey
1 teaspoon vanilla
1 cup dried fruit
Preheat oven to 325 degrees. Lightly grease a large cookie sheet.
Combine oats, coconut, nuts, wheat germ, brown sugar, cinnamon and salt in a large bowl.
Stir together oil, water, honey and vanilla in a small bowl. Pour over dry mixture and mix well. Spread evenly on prepared cookie sheet.
Bake in preheated oven for one hour, stirring every 15 minutes. Bake until golden brown. Cool on cookie sheet on wire rack. When completely cool, stir in dried fruit and any extra ingredients you like. Store in an air tight container.
