Oatmeal Raisin Cookies for Two
4 tablespoons butter, softened
4 tablespoons sugar
4 tablespoons brown sugar
1/2 teaspoon vanilla
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup flour
1/2 cup oats
1/2 teaspoon cinnamon
1/2 cup raisins
Preheat oven to 350 degrees. Mix together butter, sugar and brown sugar in a small bowl. Add in vanilla and egg and mix well.
Add baking soda, salt, flour, oats and cinnamon and stir to combine. Add raisins and mix.
Form dough into balls and place on parchment lined cookie sheet. Flatten balls slightly.
Bake for about 8 minutes or until edges start to turn brown. Remove from oven and allow cookies to cool on sheet for a few minutes. Remove to cooling rack and cool completely. For an extra special treat, make a thin powder sugar glaze and frost the cookies. Allow them to air dry before storing, assuming there are any left.
NOTE: Recipe may be cut in half. Use only egg yolk instead of whole egg.
We prefer a chewy cookie as opposed to a crisp one and I learned years ago the secret to a chewy
cookie is to slightly under bake them. If you wait until brown you will get a crisp cookie.
