White Chicken Chili


1/2 pound boneless, skinless chicken breasts, cooked and cubed or 1 can chicken

1 small onion, chopped

1-2 garlic cloves, minced

1 teaspoon ground cumin

1 teaspoon basil

1 teaspoon oregano

4 cups chicken stock or broth

1 can Rotel tomatoes

1 (15 ounce) can white beans, drained

1 cup frozen whole kernel corn or 1 can corn, drained

1/4 cup white rice, optional

Salt and pepper to taste

Directions:

Add all ingredients to a soup pot. Bring to a boil and simmer for 30 minutes stirring occasionally.

Serve with shredded cheese.
